Connoisseurs all over the world have a very special place for Indian food. The high regard is given as a result of all the spiciness within the recipes. Authentic Indian recipes have evolved over many man years into a wide spectrum of dishes, ranging from two-minute snacks to more elaborate and complex preparations. Indian food makes use of numerous herbs and spices, differing slightly from one city to the next. Southeast Asia plays a role in the influence of this fascinating cuisine.

What are authentic recipes? An authentic recipe varies from province to province, family to family and even person to person. In my thinking an authentic recipe is whatever I had eaten the first time and enjoyed it as a new dish, it becomes my reference point. I have tried to replicate some dishes to that same taste from 50 years back, but have not always been successful. I would like to think that I cook many of the traditional foods, which are modified according on the availability of ingredients, and tailored to my family’s taste. I enjoy cooking because I am in charge, so these recipes are what my family and I enjoy.

Want to try something new with mutton- Its time for Methi Mutton with fresh fenugreekleaves which is also called Methi leaves.I have come up with this kind of mutton curry which should be new to your taste-buds and should create a league of its own.Really appreciate  your comments and suggestions.

Ingredients:
2 Pounds of  goat leg, cut into suitable bite-sized pieces
4 tbsps  cooking oil
2 large onions sliced thin
1 large tomatoes diced
2 tbsps gingergarlic paste
2 tsps coriander powder
1/2 tsp turmeric powder
1/2 tsp red chilli powder
2 tsps garam masala powder
Salt to taste
500 gms fresh, green fenugreek leaves, washed in chopped fine

Preparation time : 30- 40 minutes
Clean the Mutton and kept it aside. Marinate the mutton with salt, Turmeric, chillipowder and Ginger garlic paste and kept it aside for 10 minutes.

Meanwhile, Heat the cooking oil in a heavy bottomed pan, on medium heat.When hot, add the onions. Sauté till the onions begin to turn a pale golden brown in color. Add the marinated mutton to the onions mixture and fry the mutton in a medium flame untill it oozes out the water.

Now add fresh methi leaves along with diced tomatoes and  fry it for another few minutes.

Add 1/2 cup of hot water to the pan, stir to mix well, simmer the heat and cover the pan. Pressure cook till the goat/ mutton is tender(3 whistles atleast). After 3 whistles ,You will need to keep checking on the goat/ mutton as it cooks and adding more water if all the water dries up. Stir often to prevent burning.Sprinkle garam masala powder on the top of the curry and mix it well.Let it stand for 2-3 mins in a medium flame.
Finally garnish with some curry leaves and coriander leaves along with few slits of chilli for extra spice touch.
Serve with Pulkas/White Rice. Sure you're going to love this recipe.

Ajowan (ajawain)
Ajowan seeds are very similar in appearance to cumin seeds and have a strong, distinctive flavor that resembles aniseed. The following is an authentic Indian curry recipe that is sure to get your juices flowing: It is easy to make, full of flavor and good for you, too.

2 tablespoons of vegetable oil
1 teaspoon of mustard seed
1 teaspoon cinnamon
1 yellow onion, diced
1 teaspoon of ginger, peeled and chopped
4 cloves of garlic, minced
8 skinless chicken thighs
1 teaspoon of peppercorns
3 teaspoons of curry powder
½ pound of squash, peeled and sliced
1 stalk of celery, finely chopped
1 can of coconut milk, unsweetened
½ cup of water

Start by heating up the oil in a saucepan, and follow this by adding in the mustard seeds. Allow the seeds to pop, and then add in the cinnamon. Cook until you can smell the cinnamon, and then add in the onions. Cook until the onion is brown, and then add in the ginger and garlic. Cook for two minutes.
Now you are ready to place the chicken into the pan. Follow this by adding the peppercorns and curry powder. Cook until the mixture is a golden brown, but don't let it burn.
Next, add your vegetables, the coconut milk and water. Boil this mixture, lower the heat and bring to a simmer. Cover the pan and cook for another 35 minutes. You will know the dish is done if the juice is neither too thick nor too thin.
