So you know I am a huge fan of flourless cookies.  These Flourless Gingerbread Cookies are my latest creation.  These Flourless Gingerbread Cookies came out really well.  Crispy on the outside and soft in the middle.  My husband liked them so much, he didn’t want to share any!  These flourless cookies are super easy to make and you only need 6 simple ingredi.

I used cashew butter in my recipe for it’s mild flavor and buttery texture.  I think macadamia butter would work well too.  You can probably use peanut butter or almond butter as well, but the taste may be a little different.  Sunflower butter is an option for those with nut allergies.  These gingerbread cookies would be great for cookies swaps.  Don’t tell anyone they are made healthier.  I promise they will never know!  This makes a small batch of cookies so you will not be stuck with a huge batch in the house.  Please let these cookies cool completely before removing from the baking sheet.  Otherwise they could crumble. he sweetness of the acorn squash goes so well with the quinoa.  I added the cranberries for a little tart flavor too.  I used fruit sweetened cranberries instead of cranberries sweetened with sugar.  So they are a little on the tart side, but work well here.  This would be a great main meal option for your vegan or vegetarian guests.  It’s quite filling!.
You guys!  These Salted Caramel Chocolate Tarts are so good!  I got the idea to make them when I saw this recipe the other day.  While it looks fantastic, it uses some ingredients that are not whole foods.  So I decided to re-make this recipe, but with whole food ingredients.   Before I share my recipe, let me be clear that these are very rich.  I used 4 inch tart shells and got 4 out of the recipe.  You can probably use a large tart shell too.  These Salted Caramel Chocolate Tarts are vegan, gluten free and grain free!  If you like things with salted caramel, you may also like my Flourless Salted Caramel Chocolate Chip Cookies.

These delicious chocolate tarts would make a great holiday dessert.  They fit almost any diet.  They are gluten free, vegan and grain free.   If you needed a nut free option, you could make the crust out of sunflower seeds and use Enjoy Life chocolate chips.  These tarts are about 4 inches and can easily be split between 2 people.  That is, if you want to share any.

 Place the chicken, chicken broth, pepper, and salt in a slow cooker. Cook on high for 4 hours. Remove the chicken from the broth and set aside to cool.

Add the gnocchi to the soup and let cook for another 45 minutes to 1 hour. Add salt and pepper to taste, if desired. Just before serving, add the spinach it will wilt upon addition.

Blanching the cauliflower will result in a perfectly textured veggie base, which blends wonderfully with the rich tastes of onion, thyme, and gruyere cheese. The recipe takes an 65 minutes to make and yields 4 to 6 servings.

In a large pot of salted boiling water, blanch the cauliflower until crisp-tender, about 3 minutes. Drain and run under cold water to stop the cooking process. Set aside.

For the sauce: Heat the milk in a pot over medium heat until little bubbles form. Remove from the heat.
In another pot, melt the butter over medium heat. Right when the butter has just melted, add in the flour and whisk until the mixture turns light brown and thickens. Remove from heat.

Continue to whisk the flour off the heat and slowly add in the heated milk. Keep whisking until you have used all the milk.

Once the rice is cooked, add one more ladle of stock, along with the squash and cheese mixture to the pan. Remove from heat and stir in the remaining squash. Serve immediately.

For crispy kale – Remove the stems from two leaves of kale, and chop. Place on a sheet pan with 1 tablespoon of olive oil, salt, and pepper. Massage the kale lightly to make sure that it’s fully coated. Place in a 400 degree Fahrenheit oven and bake for approximately 5 minutes, just until the kale is crunchy and beginning to brown.
Chowder is yet another must-have in the comfort food category. This Potato Corn Chowder recipe from Damn Delicious requires a simple crockpot preparation, meaning it’s as easy as it is tasty! Thyme, oregano, and garlic provide key flavors to highlight the dish’s potato and corn base.
