Okay, so we’ve confirmed the fact that I’m a confirmed, card-carrying Chocoholic.  But the truth is, I don’t stop at chocolate.  I love dessert!  And it’s not just the eating I enjoy, either.  I can’t help it–I really love to make desserts.  And I make dessert often enough that if I wasn’t willing to share, Justin and I would already be wearing dentures!  So, I try to run some laps, do a few extra squats, AND send Justin to work with treats for his coworkers as often as I can.

Here’s the dealy-o, though.  As fun as it is to slave in the kitchen all afternoon and be rewarded later with a rich, gooey pan of brownies or some other treat, I don’t always have time for that.  And there are days when a girl just has to have her sweet treat and have it NOW, right?  So I’m a big advocate of desserts that can be made in….the microwave!

That’s right, there’s no delayed gratification with the collection of recipes I’m sharing, here.   Assemble the ingredients for any of the following 25+ desserts, and you are just minutes away from having your dessert and eating it, too!  Hooray for the inventor of the microwave, and the smart cooks who didn’t stop at popcorn.  Tonight, you can treat yourself or your loved ones, if you decide to share with time to spare.

5 tablespoons salted butter, melted, plus additional for greasing
1 1/2 cups cookie crumbs (10 graham crackers or 24 small gingersnaps; about 6 oz, pulsed in a food processor until finely ground)
2 tablespoons sugar

For chocolate cream filling
7 oz fine-quality bittersweet chocolate (not more than 70% cacao; not unsweetened), finely chopped
1 cup heavy cream
1 large egg, at room temperature for 30 minutes

For marshmallow topping
1 bag marshmallows  - I used the big puffy ones but I’m sure the little guys would do.
Make graham cracker crust: Put oven rack in middle position and preheat oven to 350°F. Lightly butter pie 9- to 9 1/2-inch pie plate. Stir together all ingredients in a bowl and press evenly on bottom and up side of pie plate. Bake until crisp, 12 to 15 minutes, then cool on a rack to room temperature, about 45 minutes.  PS Feel free to use a premade crust – I won’t tell:

Make chocolate cream filling: Put oven rack in middle position and preheat oven to 350°F. Put chocolate in a large bowl. Bring cream just to a boil in a 1- to 1 1/2-quart heavy saucepan, then pour hot cream over chocolate. Let stand 1 minute, then gently whisk until chocolate is melted and mixture is smooth. Gently whisk in egg until combined and pour into graham cracker crumb crust crust will be about half full.
Cover edge of pie with a pie shield or foil and bake until filling is softly set and trembles slightly in center when gently shaken, about 25 minutes. Cool pie to room temperature on a rack filling will firm as it cools. about 1 hour.

Brown topping: Preheat broiler. Transfer pie to a baking sheet protect crust with foil/pie shield. Broil 3 to 4 inches from heat, until marshmallows are golden brown, about 3 minutes. Cool pie on a rack 10 minutes. Slice pie with a large heavy knife dipped in hot water and then dried with a towel before cutting each slice.

As it would then happen, I had some Ricotta cheese in the fridge so I decided to mix the two – it set my taste buds racing. I loved it.

I know many of you think I must be off my rocker … but this is a MUST TRY. Lately, I have been reading a lot about modern food combinations with unusual flavours. Let me mention a few …
1. dark chocolate + parmesan cheese
2. chocolate mousse + crispy onion sprinkle
3. oysters + coconut + lychee + rose
4. lobster + passion fruit
5. belgian endives + chocolate + vanilla ice cream.

The one that really aroused my curiosity was the chocolate mousse and crispy onion sprinkle. I just had to try it so I dashed off to my Woollies store down the road and bought a tub of chocolate mousse and a bag of crispy onion sprinkle, you know the type that they sell as a soup topping. So that evening I took a scoop of chocolate mousse and a healthy serving of onion sprinkle and I served this unusual matching to some very startled guests …! Well, well, well, if you want to impress your friends with an amazing out of the box dessert that you don’t even have to make yourself …try this. The tastes just gel together and produce a surprising and unusual delicious combination. Put this on your list the next time you are out of ideas for dessert!
